Stuffed Blueberry Muffins

  • 1/3 cup butter softened
  • ¾ cup sugar
  • 2 eggs
  • 1 ½ cup flour
  • 1 ½ tsp baking powder
  • 1 tsp cinnamon
  • 1/3 cup milk

Cream butter, add sugar and eggs and beat. Add flour, baking powder, cinnamon. Alternating with the milk and cream mixture, fill greased muffin cups half full.

  • 6 oz cream cheese
  • 1/3 cup sugar
  • 1 small egg
  • ¾ cup fresh or frozen blueberries
  • ¾ cup fresh or frozen raspberries

In a small bowl beat cream cheese. Add sugar and egg and beat well. Carefully fold in berries. Drop TBSP of cream cheese mix into the center of each muffin.

  • Topping
  • ¼ cup flour
  • 2 TBSP brown sugar
  • ½ tsp cinnamon
  • 1 TBSP butter

Combine until crumbly. Sprinkle on top of each muffin. Bake at 375 degrees for 25-30 minutes. Makes 15-18 muffins.
