Oven Breakfast Casserole

  • 2 lbs shredded frozen potatoes
  • 1 lb shredded cheddar cheese
  • 1 lb bacon fried and chopped
  • 4 TBSP butter melted
  • 6 eggs beaten
  • 1-2 cans of evaporated milk

Mix melted butter, eggs, milk, and cheese. Mix in potatoes and bacon. Bake at 350 for 45 minutes. Use a 9x12 oven proof pan. Also great in a Dutch Oven. In a Dutch oven use 6 charcoals on bottom and 12 charcoals on top.
